Does anyone have a good recipe for a fruit dessert pizza?
I would prefer a recipe thats sugar free if possible but I would be willing to accept a recipe for it with sugar added if necessary. Just in case you dont know what Im talking about its a kind of dessert pizza that I first tried at "Golden Corral" and Im not sure but I believe its on a sugar cookie crust with cream cheese icing and different kinds of fruit on it.

Its Not the Golden Corral Recipe...but, This is a really good one too. I make this every year for a friends birthday that doesn't like cake. Everyone really enjoys it. You can make the crust from scratch or you can use a packaged sugar cookie dough. I substitute Splenda for all the sugar in this recipe except the powdered sugar. You can change the fruit according to season plums, banannas, raspberries, mangos.
Crust:
1/2 cup unsalted butter, room temperature
2/3 cup sugar
1 egg
Zest of one lemon
1 tsp. vanilla extract
1 1/4 cup flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. salt
Frosting:
1 package of cream cheese, (8 oz.) I used reduced fat
2 T sugar
1/4 cup powdered sugar
1 T fresh lemon juice
Zest of 1 lemon
Fruit:
Strawberries
Blueberries
Peaches
Kiwi
Preheat the oven to 350 degrees. Spray a pizza pan with cooking spray and set aside. Cream the butter and sugar together with a mixer. Add the egg, lemon zest, and vanilla. Mix until well combined. In a bowl, add flour, baking soda, cream of tartar, and salt. Whisk. Add flour mixture to the butter mixture on low speed, using the mixer. Mix just until combined. Bake for 10-12 minutes. You want the crust to be light golden brown. Let the crust cool.
Make the frosting. Mix the cream cheese, sugars, lemon juice, and lemon together untilsmooth. Spread over cooled cookie crust. Arrange fruit on the cookie pizza. Chill until ready to serve.27 month(s) ago
